Never again....

I made lunch for some friends yesterday. This is not unusual.
I used a new recipe that I was fairly excited about. It was an Italian Bread Soup.

It sounded so good. It had Cabbage, Kale, Bacon, Bread, Cheese, and Sardines in it. It smelled delicious cooking.

Imagine how mad I was to discover that with every bite I hated it more and more. I was surrounded by people who seemed to enjoy it. For me there was something in the texture that grossed me out, and then something else, but I can't quite put my finger on what it was.

Something about this dish made me want to punch it in the face though. Not a good feeling.
Luckily there was a delicious fruit dessert that followed and later later brownies!
1/2 pint blueberries
1 pint blackberries
1 banana
3 clementines, segmented
1/2 cup of slivered almonds
1 can coconut milk
1 box of instant vanilla pudding

Mix together and put into pretty bowls or cups!

Needless to say, I will never ever make bread soup ever again.

Fruit Pizza

I made Aunt Stacey's Fruit Pizza...well kind of.

The crust was a Ginger Snap crust and the fruit dip had lemon zest and juice to cut some of the sweetness. It was good!

Ginger Snap Crust:
1lb bag of ginger snaps
2 sticks of butter, melted

Crush the snaps in the fashion you feel most necessary for the day. Some days I'm already at peace and use the food processor...other days it is necessary to use a rolling pin and force. Mix the crushed snaps and the butter together, and press into your pan. Bake @ 350* for 8-10 minutes. 

Fruit Dip:
2 8oz blocks of cream cheese, softened
2 jars of marshmallow fluff (if you heat this for 15 sec. in the microwave it comes out easily)
juice and zest of 1 lemon

Mix on high until blended and fluffy!

Let the crust cool. Spread your fruit dip all over the crust and then put the fruit on! Make it look pretty!

Exciting Day!

Today my nephew Moriyah Sheel Lund was born! In honor of him I will post the cake I made for his baby shower!

1 box banana cake
4 mushed banana
1 Bag chocolate chips

Follow the directions and substitute the bananas for the water. Stir in the chocolate chips!  Bake and let cool completely!

 Peanut Butter Frosting
2 cups peanut butter: Side note: -> I make my own in  a food processor, 2 cups peanuts blitzed with enough oil till smooth. Add a pinch or 2 of salt and a tbls of honey if you want.
2 cups confectioners sugar
10 tbls butter, at room temp ( I use salted, but unsalted is best)
3 tsp of Vanilla
1/2 tsp of salt (sounds like a lot, but it cuts some of the sweetness)
2/3 cup of heavy cream

Mix first five ingreadients together until very creamy. You will need to scrape the bowl as you go! Add the cream and beat on the highest speed until it looks like clouds of peanut butter!


Mori is 7.1 lbs and 20 and 1/4 inches!

When food nightmares hit.....dundundun

So last night I had the same dream 3 times...

It's 6:30, and I've just gotten back from shopping. NONE of the food is cooked except the minimal amount of prep that happened last night. Friends and family start to arrive. I PANIC. Nothing is done. My shrimp stuffed biscuits aren't stuffed, and I can hear Ryan in the background saying, "Just order some fried chicken!" He says it over and over and over again.

I woke up this morning and told Ryan about the dream. He assured me that I was crazy...He hates fast food fried chicken. Well unless it's Popeyes. He even stayed home to help me out today. He is wonderful!

So it's 10:30 AM and I'm about to get everything else needed for tonight.
Repeat after me:
No breakdowns, no breakdowns, no breakdowns, NO BREAKDOWNS!!

Appitizer dinner

My dear friend and his new wife are coming into town. I haven't met her yet...I'm nervous. Should I be? I'm not sure.

In honor of my friend, and in order to make a good first impression I'm creating dinner. I say creating because I will be using new recipes. My recipes..., or well as far as I know they are original. Of course there will be some not original.
Quinoa tarts
Soy and orange marinated Wasabi incrusted fishies
Shrimp stuffed biscuits (not original)
Pistachio, Feta, and Cranberry salad (not original)
Stuffed dates...the newness is in the stuffing!
Mango tea (obviously not original, but delicious)

Ok, so this is the menu minus dessert because I just haven't decided on that part nor have I received inspiration....my I will stare at an apple until I have it. Can an apple be a muse and offer inspiration?

There will be pictures and recipes later.

For right now let it be said that I am being silly and watching the end of Sister Act II (haha Nostalgia), and just the end, while enjoying chocolate raisins with a glass of ice water. "I am a HEADLINER"
